Collaboration with GAEC de l’Estorgue

Restaurant Le Suffren is proud to showcase the quality local produce it offers its customers. Indeed, we attach great importance to working with local producers in the Auvergne region to offer an authentic and tasty culinary experience. Our privileged partners include La GAEC de l’Estorgue, a family farm located in the commune of Saint-Sauves-d’Auvergne.

An exceptional farm

The GAEC de l’Estorgue is perched at an altitude of 1000 meters, offering an exceptional setting for its animals. The farm’s owners raise dairy cows with the greatest care, respecting the animals’ well-being and the quality of their production. They transform part of their milk into cheeses, notably Salers from May to October and farmhouse Cantal throughout the year.

Authentic, tasty cheeses

The cheeses produced at La GAEC de l’Estorgue are renowned for their unrivalled quality and flavor. Salers, a seasonal product, is a pressed, uncooked cheese made from the milk of Salers cows. It is distinguished by its complex taste and firm texture. As for farmhouse Cantal, it is produced throughout the year and offers a range of flavors that evolve over time.
A partnership based on quality and respect for tradition
By buying from La GAEC de l’Estorgue, we support local producers and preserve the cheese-making traditions of the Auvergne. Le Suffren is committed to promoting quality products from agriculture that respects the environment and animals.
